    This recipe makes two loaves. Use butternut or other sweet pumpkin and make sure you drain the pumpkin well both before and after pureeing.

    Ingredients
    Serves: 24 

    • 450g cooked pureed pumpkin
    • 1 cup (250ml) vegetable oil
    • 4 eggs
    • 3 1/2 cups (430g) plain flour
    • 3 cups white sugar
    • 1 1/2 teaspoons baking soda
    • 1 1/2 teaspoons salt
    • 1 1/2 teaspoons ground allspice
    • 1 1/2 teaspoons ground nutmeg
    • 2 teaspoons ground cinnamon
    • 1/2 cup (60g) chopped walnuts
    • 1 teaspoon baking powder

    Directions
    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat oven to 150 degrees C.
    2. Combine pumpkin, oil and eggs. Sift together dry ingredients. Combine the two mixtures, blending thoroughly.
    3. Pour into 2 greased 22 x 13 cm loaf pans and bake for 1 hour.

    This was an excellent pumpkin bread. I substituted one cup of applesauce for the vegetable oil, put the batter equally in a large loaf pan and 4 small ones, and baked them at 350 about 40-45 minutes.
