Cinnamon Honey Ice Cream

    I was looking through my Tex-Mex cookbook and found this really interesting ice cream recipe I hope you all like. Ingredients adjusted to suit our family's taste.

    Serves: 12 

    • 2 cups (500ml) milk
    • 3/4 cup (200ml) honey
    • 1 teaspoon cinnamon
    • pinch salt
    • 2 eggs beaten
    • 2 cups (500ml) heavy cream
    • 2 teaspoons vanilla

    Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

    1. Heat milk in two litre saucepan over medium heat but do not boil; stir in honey, cinnamon and salt.
    2. Pour about 1/2 cup hot milk into eggs and beat with whisk; pour eggs into saucepan with remaining milk mixture.
    3. Cook and stir over medium-low heat 5 minutes (mixture should thicken slightly).
    4. Cook to room temperature. Stir in cream and vanilla. Refrigerate overnight or until cold.
    5. Freeze in ice cream maker according to manufacturers directions.

    My first ice-cream with my ice-cream maker. Love the taste of this, although it didnt freeze to proper consistency. Might be due to the recipe making too much for the ice-cream maker to churn.  -  24 Dec 2008
