This recipe was given to me after smelling them cooking in my neighbour's kitchen while working in the garden. Zucchini is mixed with onion and cheese into some heavenly fritters. Soon, you will look forward to making them just like I do!!!
In a large bowl, mix together the zucchini, onion, garlic, eggs, cheese, parsley, milk, and flour. Season with salt and pepper.

Heat about 1 tablespoon of oil in a large frypan over medium heat. Drop tablespoons of the batter into the frypan, and flatten slightly with the back of a spatula. Turn fritters over when the center appears cooked. Cook on the other side until golden brown. Set aside and keep warm. Add more oil to pan as needed, and continue with remaining batter.
Used different ingredients.
I had blue cheese so used that and less flour, only half a cup of sr flour, two eggs and two small zucchini, were really tasty.
Great recipe, I didnt tweak, but it is one of those recipes you can add whatever you have on hand at the time. I made a gluten free version, just swapping regular flour for gluten free flour :-)
Because of earlier reviews I tweaked the recipe. We quite enjoyed the fritters although I think I should have used another zucchini...seemed to be more flour than vegetable. Will do this next time.
