Serves: 4 

  • 1 medium pineapple
  • 4 tablespoons rum
  • 4 tablespoons soft brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves

Preparation:10min  ›  Cook:15min  ›  Extra time:1hour marinating  ›  Ready in:1hour25min 

  1. Peel the pineapple, slice into 8 rings, and remove the centre core from each ring while leaving it whole.
  2. Place the rings in a shallow glass dish.
  3. In a small bowl, mix together brown sugar, cinnamon, ginger, nutmeg and cloves. Stir in rum, pour mixture over the pineapple, cover and refrigerate for 1 hour or overnight.
  4. Preheat barbecue to high.
  5. Barbecue pineapple rings for 15 minutes, turning once, until outside is dry and chargrilled.

Made it vegetarian. gooo-oood! i didn't marinate it, just fried the spices up in a saucepan with tinned pineapple (omitting the rum and just using a little juice from the tin) and served it over a spinach salad. yummy. i will definitely make it again! - 29 Sep 2008


Used different ingredients. I added a chilli paste to add depth to the flavour but it was too much with the cloves - next time I would just use the cinnamon and the chilli paste - and I would go light on the cinnamon. My husband also cooked them a touch too long. - 29 Sep 2008


Oooh good! I'll be making this again. I marinated the pineapple in a bag in the fridge and grilled it in the oven. Delicious, and good with ice cream. - 29 Sep 2008
