Vegemite, cheese and chilli grilled inside two tortillas. You can also fry them with a little oil in a frypan. Serve cut into quarters. Viva!!
Ingredients
4 large (about 26cm) tortillas, or 8 small tortillas
2 teaspoons of Vegemite - more or less depending on preference
200g grated cheddar or tasty cheese
1 green chilli, deseeded and chopped (more to taste)
Tabasco sauce - or any Mexican hot sauce - to taste
Preparation method
1.
Preheat the griller to medium.
2.
Spread two of the tortillas with Vegemite to your desired thickness.
3.
Cover evenly with grated cheese and then sprinkle the chopped chilli across the tortillas.
4.
Sprinkle on a little Tabasco.
5.
Sandwich another tortilla on the top and place carefully under the griller.
6.
Grill both sides till they start to brown and the cheese is melted - about 5 mins each side. Flatten them with a spatula or tongs if the tortillas start to lift apart during grilling.
7.
Remove from griller and cut into quarters.
