Savoury Vegetable Rolls

Easy to make and even easier to eat this vegetable roll is a tasty alternative to the sausage roll and you can decide what size you want the rolls to be. Tastes just as good cold-so make a few for school lunches.

Altered ingredient amounts. Update to this recipe, comments on quantity are correct so its a case of either doubling the pastry or halving the ingredients, sorry for the initial mistake on the pastry sheet quantity

Used different ingredients. I skipped brushing the pastry with egg and sprayed the rolls with oil instead. I also used breadcrumbs and some lemon/garlic/herb spice mix instead of the stuffing mix.

Doubled the quantities, but I needed a lot more pastry! Made about 36 small sausage roll sized rolls. There was probably a bit too much capsicum in these for my liking, I think if I made it again I would leave it out or at least use a lot less. I also used breadcrumbs and herbs rather than stuffing mix.

I replaced the stuffing mix with TVP (textured vegetable protein), left out the capsicum (kids dont like it), added finally chopped up broccolli and sweet potato and a jar of tomato

yes the filling was way more than was needed. i added cheese and used breadcrumbs instead -still lovely - and healthy.great for kids who choose to be allergic to vegies !!!

I might have to agree with AUSSIE_CASIE it was so nice, but next time i would cut the recipe in half. Also if you spray it with oil now you have made it VEGAN!!. So that is what i did.

The original recipe serves more than 2 people. I doubled the recipe, served 4 people for dinner and 2 for lunch with still more in the freezer. Rolling the pastry is a little time consuming but well worth it for the comfort food factor. They were tasty and I'd make them again.
