Beef Sausage and Tomato Bake

A very simple and healthy sausage bake with capsicum, tomatoes and herbs. Use whatever tomatoes you have, these are the tomatoes that I like to use.

Serves: 4 

  • 8 thick lean beef sausages (approx 500g)
  • 200g grape tomatoes
  • 250g cherry tomatoes
  • 2 large tomatoes
  • 1/2 cup basil leaves
  • 1 large green capsicum
  • 1 long red chilli
  • Olive oil
  • Crusty bread to serve

Preparation:15min  ›  Cook:35min  ›  Ready in:50min 

  1. Preheat oven to 220 degrees C (200 fan forced).
  2. Chop the large tomatoes in quarters then layer them, the small tomatoes, chilli, green capsicum, torn basil leaves & a tablespoon of olive oil in a large baking dish. Season with salt and pepper before tossing. Top with beef sausages.
  3. Bake for 35 minutes turning sausages occasionally.
  4. Serve with baked potatoes, baked pumpkin and a crusty bread.
