Broccoli, rice and parmesan cheese mixed then moulded into domes using a teacup (or similar) for a special looking side dish or lunch.


Serves: 4 

  • 1 cup (185g) uncooked white rice
  • 2¼ cups water
  • 1 teaspoon salt
  • 2 cups frozen or fresh broccoli
  • juice of half a lemon
  • ¾cup (90g) grated parmesan cheese
  • salt and pepper to taste

  1. Place rice, salt and water into electric rice cooker and cook until done. (or cook however you normally cook rice.)
  2. Steam the broccoli in the microwave (8 mins) till soft then lightly blitz it in a blender/food processor. Combine the broccoli and hot rice in a bowl with a wooden spoon.
  3. Add the lemon juice, cheese and salt/pepper and stir until mixed through evenly.
  4. Once the cheese melts through, it should keep its shape well.
  5. Fill a mould or teacup with the mixture and turn out onto plates. Garnish with extra cheese, parsley, lemon juice and black pepper.
