Chocolate Cupcakes with Chocolate Icing

    Chocolate or cupcake lovers will adore this recipe. The recipe came about a few years ago and I always enjoy making it. It also works as a muffin recipe if you put the batter into greased muffin pans.

    Serves: 6 

    • 100g butter
    • 2/3 cup caster sugar
    • 1 teaspoon vanilla essence
    • 2 eggs, lightly beaten
    • 1 cup (125g) self-raising flour
    • 1/3 cup ((40g) cocoa
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 cup (125ml) milk
    • 60g unsalted butter
    • 1¼ cups icing sugar, sifted
    • 1 tablespoon cocoa
    • 1 tablespoon of milk

    1. Preheat oven to 180 degrees C (160 degrees fan forced).
    2. Cream butter, sugar and vanilla until light and creamy. Gradually add eggs and mix until just combined.
    3. Sift flour, cocoa and bicarb. Add to creamed mixture with milk. Stir until just combined.
    4. Spoon into patty cases, about 1/3 full.
    5. Bake for 15 to 20 minutes in pre-heated oven or until skewer comes out clean.
    6. Leave out to cool.
    7. To make chocolate icing, combine the 60g of butter, sifted icing sugar, the cocoa and the milk in a food processor or bowl and mix until combined.
    8. Spread the icing over the tops of the cupcakes.
