I started this recipe from a very basic one and now I think this is my speciality. I don't use butter or oil because it makes the pancakes less light and fluffy.

At first, I made this exactly to the recipe. The mixture stuck to the pan, wasn't sweet enough and was leaden. As an experienced cook, I was unimpressed. I added two Tbsps of white sugar and greased the pan with a little butter. It made nice pikelets. I shan't use this recipe again, but it was acceptable, after those two tweaks. - 15 Oct 2017
