Summar's Pancakes

    I started this recipe from a very basic one and now I think this is my speciality. I don't use butter or oil because it makes the pancakes less light and fluffy.

    Serves: 2 

    • 1 cup (125g) self raising flour
    • 1 large egg
    • 3/4 cup (190ml) milk
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt

    Preparation:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Make sure your milk and egg are at room temperature. If not put the two together and heat in the microwave for less than a minute depending on its power. Just make sure you don't cook the egg.
    2. Mix all ingredients together with a spoon or spatula. Keep the batter lumpy by not mixing it too much.
    3. Heat a non stick frying pan on high. Once it sizzles from drops of water it's ready. Reduce the heat from high to medium-high to get a perfect golden brown colour.
    4. Pour in about half a cup of batter and cook till bubbles form on the up side. Flip and cook on the other side.

    Altered ingredient amounts. add quarter cup of cream and a cup of blue berries gently stirred in - yum!  -  25 Dec 2010


    At first, I made this exactly to the recipe. The mixture stuck to the pan, wasn't sweet enough and was leaden. As an experienced cook, I was unimpressed. I added two Tbsps of white sugar and greased the pan with a little butter. It made nice pikelets. I shan't use this recipe again, but it was acceptable, after those two tweaks.  -  15 Oct 2017
