Chilli Tomato Sauce

7 people made this

Make this sweet chilli tomato sauce more or less hot by the number of chili seeds you leave in or remove. You should use gloves when making this as you will touch a LOT of chilli! This recipe makes about eight 375ml bottles so is a great idea for presents for chilli loving friends and family.

Makes: 8 375ml bottles

  • 12 birdseye chillies cut in half
  • 12 long red chillies cut in half
  • 2 cups (440 ml) sugar
  • 2 cups (500 ml) white vinegar
  • 1 medium onion finely diced
  • 2 cloves garlic crushed (or 2 teaspoons bottled garlic)
  • 1 teaspoon salt
  • 2x440g tins diced tomatoes
  • 2 cups tomato passata (or puree)
  • 2 tablespoons tomato paste

Preparation:5min  ›  Cook:20min  ›  Ready in:25min

  1. Remove the seeds from about half the chillies and, depending on how hot you would like the sauce to be, remove some more seeds. Roughly chop the chillies.
  2. Heat the sugar and vinegar in a large saucepan over a medium heat, stirring to dissolve.
  3. Add the diced onion and the garlic and cook for five minutes, then add the chillies and the rest of the ingredients and bring to the boil.
  4. Simmer for 15 mins, then blend with stick blender. Transfer to sterilised bottles.
