Golden Spiced Banana Muffins

    A moist, very flavorful soft and light muffin, with lots of fibre. Absolutely delish!

    Serves: 12 

    • 125g butter softened
    • 90g soft brown sugar (packed)
    • 3 bananas, mashed (fresh, not brown)
    • 1/4 cup (60ml) milk
    • 2 tablespoons golden syrup
    • 2 teaspoons vanilla essence
    • 2 eggs
    • 1 1/2 cups (185g) plain flour
    • 1/2 cup unprocessed bran
    • 1 teaspoon baking powder
    • 1 teaspoon b-carb soda
    • 1/4 teaspoon salt
    • 1 teaspoon allspice

    1. Preheat oven to 190 degrees C.
    2. Grease a muffin tin or line with patty pans/muffin cases.
    3. In a large mixing bowl, cream butter and brown sugar together until fluffy.
    4. Add bananas, milk, golden syrup, vanilla and eggs; mix well.
    5. Stir in flour, bran, baking powder, allspice soda and salt; blend just until moistened.
    6. Spoon batter into prepared muffin tray/liners.
    7. Bake at for 20 to 25 minutes or until a skewer inserted into the centre of a muffin comes out clean.
    8. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.
