Caramel Coconut Biscuits

    These biscuits go in small and come out huge. With golden syrup, cornflakes and coconut, they taste great as well.

    Serves: 24 

    • 225g butter, softened
    • 2 cups sugar
    • 1 egg
    • 1 teaspoon golden syrup
    • 1 teaspoon vanilla essence
    • 2 teaspoons baking powder
    • 2 cups cornflakes, crushed
    • 2 cups flour
    • 1/2 teaspoon baking soda
    • 1 cup coconut

    1. Preheat oven to 180 degrees C. Lightly grease an oven tray.
    2. Cream butter and sugar, add the egg, golden syrup and vanilla essence.
    3. Add remaining ingredients and mix well til combined.
    4. Roll into balls and put the balls on the tray. Make sure they are spaced well apart as they spread a huge amount. Flatten slightly with a fork.
    5. Bake at 180 degrees for 15-20 mins or until golden brown. Put the biscuits onto rack and leave to cool.

    Easy to make, and they do spread heaps in the oven but they taste great and the kids love them!!  -  03 Mar 2012
