Flaming Vodka Pasta Sauce

    This creamy tomato vodka and proscuitto sauce will knock your socks off! The prosciutto gives it a great flavour and you can add as much red pepper as you like.

    Serves: 4 

    • 1/2 onion chopped very fine
    • 2 cloves garlic chopped fine (if using minced garlic from a jar, 2 teaspoons is the equivalent)
    • 2 tablespoons olive oil
    • 1/2 teaspoon chilli flakes
    • 1/2 teaspoon black pepper
    • 200g shredded prosciutto
    • 300ml heavy cream
    • 150ml vodka
    • 185g tomato pasta sauce
    • 125g tomato paste
    • 125g grated cheese

    1. Put the pasta on to cook (acording to packet directions) in lots of boiling salted water.
    2. Using a large fry pan, sauté garlic and onion for 5 minutes, then remove from fry pan into a separate bowl. Sauté prosciutto for 5 minutes, then add into bowl with onion and garlic.
    3. Add vodka and chilli flakes to pan and ignite for 45 seconds - take it off the stove when you do this!
    4. Add pasta sauce, tomato paste and sautéed ingredients and simmer for 5 minutes, then add the heavy cream and grated cheese and heat on low for 10 minutes. Serve with freshly cooked pasta!
