Creamy Bruschetta

    Traditional bruschetta blended with cream cheese. It also makes a tasty dip or spread. Whip it up for your next party.

    Serves: 12 

    • 2 large tomatoes, chopped and seeded
    • 1 cup fresh basil leaves, chopped
    • 1/3 cup finely chopped onion
    • 250g low fat cream cheese, softened
    • 2 tablespoons olive oil
    • 3/4 tablespoons minced garlic
    • salt and pepper to taste

    1. Mix together the tomatoes, onion, garlic, basil, oil, salt & pepper.
    2. Add cream cheese and blend thoroughly.
    3. Spread on just toasted/grilled slices of Italian bread or use as a dip.
