Bacon and Cheese Potato Bake

    A twist on an old favourite, I used to make my potato bake different every time but this is the best yet.

    Serves: 4 

    • 3 large potatoes, peeled and thinly sliced
    • 250g grated cheddar cheese (divided)
    • 1/4 cup (60g) smooth ricotta cheese
    • 1 small brown onion, diced
    • 1/4 cup (30g) mushrooms, diced
    • 1 cup (250ml) milk
    • 2 tablespoons butter or margarine, melted
    • 1/4 teaspoon black pepper
    • 1 teaspoon oregano
    • 1 teaspoon fresh crushed garlic
    • 3 tablespoons flour
    • 1 rashers of bacon, cooked and diced finely

    1. Preheat oven to 180 degrees C.
    2. Place the potatoes in a 23x33cm baking dish.
    3. Keep 1/4 of the cheddar cheese aside. In a large mixing bowl combine the rest of the cheese with ricotta, onions, mushrooms, milk, butter, pepper, oregano and garlic.
    4. In a small cup, whisk flour well with a small amount of water to prevent clumping, then add to mixture.
    5. Pour prepared mixture over the potatoes and stir in so that all potatoes are coated. The liquid should mostly cover potatoes; add more milk if needed.
    6. Bake in the preheated oven about 2 hours, until potatoes are tender. In the last half hour, cover with remaining grated cheese and bacon.
