    A salad of raw salmon, fruit and vegetables which is popular for Chinese New Year celebrations. It has an amazing plum sauce-based salad dressing. The idea is that all the ingredients are grated into long strips or as thinly sliced as you can slice them, then the salad is communally tossed at the table.

    Ingredients
    Serves: 8 

    • 200g raw salmon, sliced thinly
    • 1/2 lime or lemon, juiced
    • 100g mango, grated or thinly sliced
    • 100g nectarine, grated or thinly sliced
    • 100g rockmelon, grated
    • 100g white radish, grated
    • 100g cucumber, grated
    • 100g carrot, grated
    • 100g red capsicum, grated
    • 100g green capsicum, grated
    • 100g sweet potato, grated and deep fried till crispy
    • 1 tablespoon Chinese Five Spice powder
    • 1 tablespoon pepper
    • 100g roasted peanuts, pounded (in a mortar and pestle)
    • 50g sesame seeds
    • FOR SAUCE
    • 1 tsp sesame oil
    • 1 tablespoon apricot jam
    • 1 tablespoon sesame paste, (use tahini or ground sesame seeds)
    • 3 tablespoons honey
    • 3 tablespoons lemon or lime juice
    • 250g plum sauce

    Directions
    Preparation:1hour  ›  Cook:30min  ›  Ready in:1hour30min 

    1. To make the sauce; combine all the sauce ingredients in a small pot and bring to a boil on low heat. Ensure mixture is well mixed and thorough. Set aside to cool.
    2. To assemble the salad; arrange all the ingredients in separate piles on a platter in a circle.
    3. Place raw salmon in the centre. Squeeze lemon or lime juice over raw salmon.
    4. Pour the sauce all over the platter. Sprinkle it with Chinese five spice powder and pepper.
    5. Sprinkle sesame seeds and peanuts and serve.
    6. Have your guests ready with chopsticks. Everyone should toss and mix the salad together at the table just before serving to ensure prosperity, abundance and vigor in the new year.
