Shortbread Christmas Biscuits

    This is a delicious recipe for shortbread with only four ingredients, one of which is rice flour. It's fun to cut out shapes and serve them at Christmas.

    Makes: 40 biscuits

    • 500g butter, softened
    • 1 cup (220g) sugar
    • 3 cups (425g) plain flour
    • 1 cup (125g) rice flour

    Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Preheat oven to 275 degrees C. Grease a baking tray and set aside.
    2. Cream together butter and sugar. Mix in the flours little at a time to make a ball of dough. Roll out the dough to 5mm thick and cut out shapes.
    3. Bake for 30 minutes until just brown. Cool before touching.

    First time making shortbread. Realized that either the cooking time or temperature in this recipe is wrong. Removed the biscuits after only 15 minutes - could smell that they were cooked. Hubby thought they were the best shortbread & has requested more.  -  09 Jan 2014
