Hot Apple Sponge Pudding

    This hot apple sponge pudding is a star for an easy dessert and it's perfect served with custard, cream or vanilla ice cream. It's so easy, and you can substitute for the fruit of your choice.

    Serves: 8 

    • 1 apple, peeled, cored and sliced in thin sections
    • 90g butter
    • 1/3 cup caster sugar
    • 1 egg
    • 1 cup (125g) self-raising flour
    • 3 tablespoons milk
    • 1 tablespoon sugar

    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C. Grease a pie dish.
    2. Heat the apples in the microwave until softened. Heat butter in microwave until softened.
    3. Put butter and caster sugar in food processor and mix until light and fluffy. Add egg, flour and milk alternatively.
    4. Place hot apples into pie dish and sprinkle 1 tablespoon of sugar over them, pour the mixture over and bake on middle shelf in the oven for 30 - 40 minutes in preheated oven.
    5. Serve with vanilla ice cream or custard.

    A lovely moist apple cake! Hubby loved it and will make again. I must admit I didn't read the recipe and just creamed the fat and sugar and then mixed with the rest of the ingredients.
