Simple couscous with ham, zucchini and mushroom

    This couscous is so easy and is a great healthy filling side dish for many meals

    Serves: 8 

    • 1.5 cups chicken stock
    • 2 cups couscous
    • 100g ham (sliced is fine)
    • 1 medium zucchini, chopped
    • 250g cherry tomatoes, chopped
    • 300g mushrooms, chopped
    • 150g dried fruit
    • juice of 1 lemon
    • 1tbsp balsamic vinegar
    • 1/2 tsp chilli
    • 1/2 tsp cumin
    • 2 tsp Morrocan seasoning
    • 1/2 tsp ground ginger to season
    • 100g slivered almonds

    1. Bring chicken stock to boil, add couscous and transfer it to large bowl with dried fruit to steep.
    2. Fry ham until crisp and add to bowl.
    3. In same fry pan, cook the tomatoes, mushroom and zucchini along with lemon juice, balsamic vinegar and spices, until cooked.
    4. Add the frypan contents to bowl with the slivered almonds and stir until combined.
