A creamy, cheesy potato bake is a great hit at barbecues especially in the cooler months. I have used cream of chicken soup mix in this recipe but I generally use the dry soup mix. I have tried a cream of pumpkin one too which was also yummy.


Serves: 6 

  • 4 medium size potatoes
  • 300ml whipping cream
  • 1 pkt cream of chicken soup mix (dry)
  • 100 ml milk
  • 1 teaspoon minced garlic
  • 1 cup (125g) grated cheddar cheese

Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

  1. Preheat oven to 190 degrees C. Peel and then slice potatoes in thin slices.
  2. Layer the potatoes in a 2-3 cup casserole dish.
  3. Mix in a bowl, the cream, milk, garlic and dry cream of chicken soup mix. Pour over potatoes in dish.
  4. Cook in microwave for 10 minutes on high.
  5. Sprinkle grated cheese on top.
  6. Cook in a moderate oven until potatoes are cooked through.

Wonderful dish. So delicious and creamy. I did change the soup mix to be bacon and onion and used a 1/2 teaspoon of garlic powder instead of minced garlic but it was still tasty. - 14 Mar 2015
