Self-Base Ham and Tomato Quiche

A real kilojoule saver! Makes a great quiche that needs no pastry but is still heaps tasty.

Serves: 6 

  • 1 onion
  • 5 eggs
  • 2 teaspoons oil
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1 cup grated cheese
  • 200g ham, finely chopped
  • 2 tomatoes, diced

Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

  1. Peel and finely chop onion. Fry in oil until golden and put into mixing bowl.
  2. Beat eggs and add to onion. Add ham, tomato, flour, baking powder and half the cheese.
  3. Pour into greased baking dish.
  4. Sprinkle with cheese and bake 30 to 40 minutes at 180 degrees C.

I use half the amount of flour, add quarter cup of sun-dried tomatoes and instead of cooking the onion use red onion or 3 chopped spring onions. - 12 Oct 2015
