A soft lemon cake also known as Kossuth Kifli. Its a rich tangy cake which makes a perfect big occasion cake or a cake for a party.

Serves: 25 

  • 230g butter
  • 1 1/2 cups sugar
  • 8 eggs, separated
  • 1/2 teaspoon vanilla essence
  • grated rind of one lemon
  • juice of one lemon
  • 2 teaspoons baking powder
  • 1 2/3 cups flour
  • 1/4 cup icing sugar

  1. In a large bowl cream butter and sugar together. Beat in egg yolks one by one.
  2. Add vanilla, lemon rind and lemon juice.
  3. Gradually add in baking powder and flour.
  4. In a separate bowl beat egg whites until stiff, then fold egg whites into batter.
  5. Spread batter into a 22x33cm floured cake tin
  6. Bake 25 to 30 minutes. Col in the tin for 15 minutes before removing to a rack.
