Chicken Breasts in Creamy Mushroom Sauce

A French style chicken breast recipe. Chicken breasts are baked then served with a mushroom cream sauce.


Serves: 2 

  • 2 chicken breasts
  • handful brown mushrooms
  • 100ml cream
  • 1 tsp dijon mustard
  • 2 cups frozen peas
  • oregano (dried or fresh)
  • splash of white white to deglaze
  • mashed potato to serve

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Season chicken with salt and pepper and pan fry to brown and place in oven at 180 degrees C for 12 mins to finish cooking. Leave to rest for 5-10 mins.
  2. Pan fry the mushrooms in the same frypan with butter and a little oil - so the butter doesn't burn.
  3. Deglaze the pan with white wine and add cream and dijon with the mushrooms and reduce if needed to create a creamy sauce. Season if desired.
  4. Cook the peas with oregano and mash with potato masher (leave the oregano in).
  5. Serve chicken cut into 3 pieces on top of mashed peas. Place sauce around peas and on part of chicken if desired.
