    Really good pancake recipe. Mixture can be halfed to make pikelets. Great to be served with ice cream and fresh fruit.

    Serves: 10 

    • 2 tablespoons of butter
    • 2 eggs
    • 2 cups self-raising flour
    • 2 cups of milk
    • 4 tablespoons of sugar
    • extra butter for frying

    1. Melt butter in microwave; beat the eggs together in a separate bowl.
    2. Add the cooled butter and milk to the eggs.
    3. Mix together the self-raising flour and sugar in a separate bowl.
    4. Slowly add wet mixture into dry and use a hand held mixer or a wooden spoon to mix well together.
    5. Heat a frypan and melt a small amount of butter in it.
    6. Ladle the pancake mixture one ladle at a time into the frypan.
    7. Flip over when mixture gets air bubbles on top. Repeat until all the mixture is used up.
