Easy, tasty, healthy soup. You could add different coloured capsicums and/or onions to taste. It's a very versatile recipe.


Serves: 4 

  • 1/2 red onion
  • 1/2 red capsicum
  • 3 cloves garlic
  • 2 tsp olive oil
  • 1 can (420g) corn, drained
  • 1 can (400g) red kidney beans, undrained
  • 1 jar (300g) medium salsa
  • 1/2 teaspoon chilli powder
  • salt, pepper to taste
  • 2 cups of chicken stock or vegetable stock or water

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. Dice the onions and capsicum; mince the garlic.
  2. Saute them all together in bottom of large saucepan with olive oil
  3. Add corn and kidney beans and stir; add the salsa and chilli powder
  4. Add chicken/vegetable stock or the water to mixture; add salt and pepper to taste.
  5. Bring to a boil and simmer for about 45minutes til the vegetables are well cooked and all the flavours have melded.
