Easy Orange Surprise Muffins

    Nice orange flavour with a hint of spice and surprise; there is jam in the middle. These are a family tradition for morning tea.

    Serves: 6 

    • 2 cups (250g) self raising flour
    • 1/2 cup (125g) sugar
    • 1 teaspoon mixed spice
    • 1 orange, juiced and zested
    • 1/2 cup (125ml) milk
    • 1 egg, lightly whisked
    • 1 teaspoon vanilla essence
    • 60g butter, melted
    • jam of your choice

    1. Combine flour, sugar, mixed spice and orange zest in one bowl. Combine egg, juice, vanilla essence and milk in another bowl. Have the melted butter ready to add in a cup.
    2. Pour the contents of the wet ingredients bowl into the dry ingredients bowl then add the melted butter.
    3. Mix lightly and quickly, some say no more than 12 stirs, then half fill muffin cases with mixture.
    4. Using 2 teaspoons, dig a shallow hole in the mix in each muffin case with one teaspoon and add a teaspoon of jam with the other.
    5. Fill each muffin case with the rest of the muffin mixture and bake at 200 degrees C for 20 minutes.
