Rinse the snapper then put on a plate. Squeeze 1 lemon over it, inside out, each side and leave it for 10 minutes then rinse again.
In a medium bowl make the sauce by adding the chives, tomatoes and chilli then mix well with the lemon juice, salt and sugar.
Half cook snapper by shallow frying not more than 1 minute each side; remove straight to the griller.
In a small bowl, mix sweet soy sauce, butter and ginger. Brush snapper each side with it until slightly brown then repeat brushing and grilling until cooked. Set aside on a serving dish.
Pour the chive and tomato mixture over it. Serve with pita bread, salad or steam rice.
