Baked Ham with Mango Glaze

    Moist, tender, succulent, tropical flavoured baked ham. Idea cold for a hot Australian Christmas with salad.

    Serves: 10 

    • 8kg leg ham
    • 250g mango chutney
    • 1/3 cup (75ml) dijon mustard
    • 1 cup (155g) brown sugar
    • 1 tablespoon orange zest
    • 1 cup (250ml) orange juice
    • whole cloves, optional

    1. Score diamond pattern over fat of ham.
    2. Transfer ham to large baking dish; set aside.
    3. Combine mango chutney, dijon mustard, brown sugar, orange zest and orange juice; this is your glaze.
    4. Preheat oven to 160 degrees C.
    5. If using cloves, insert stems in diamond pattern.
    6. Brush ham well with the glaze.
    7. Bake for 45 minutes basting with remaining glaze.
    8. I like to cool it and carve when cooled but it can be carved after resting for fifteen minutes.
