Can't Fail Chocolate Muffins

    My sister gave me this recipe for chocolate muffins when I needed them for my children's and husband's school lunches.

    Serves: 12 

    • 110g butter
    • 1 1/2 cups (335g) caster sugar
    • 1 teaspoon vanilla essence
    • 2 eggs
    • 1 1/2 cups (185g) flour
    • 1 1/2 teaspoons baking powder
    • 1/4 cup (30g) cocoa
    • 3/4 cup (185ml) milk
    • 2 tablespoons milk

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat oven to 180 degree C bake. Line muffin tray with muffin cases.
    2. Cream butter, sugar and vanilla essence until light and fluffy.
    3. Add eggs one at a time then beat until well combined.
    4. Sift flour, baking powder and cocoa.
    5. Slowly add the sifted flour, baking powder and cocoa to the creamed mixture alternating with the milk, beating well after each addition.
    6. Once mixed well spoon into the muffin cases in the muffin tray.
    7. Bake for 15 minutes or when tested done.

    Even easier if you just use self raising flour. They did not fail and were light and fluffy...even better with some melted chocolate on top...thanks for sharing.  -  17 Feb 2012
