    This dish is very colourful, delicious and quick to make. Did I mention nutritious? Just add rice and you have a meal.

    Ingredients
    Serves: 6 

    • Sauce
    • 1/2 cup tomato sauce
    • 4 teaspoons soy sauce
    • 1/2 teaspoon salt
    • 2 tablespoons Worcestershire sauce
    • 3 tablespoons sugar
    • 1 1/2 teaspoon sesame oil
    • 1/4 teaspoon cayenne pepper
    • 1/2 cup (125ml) chicken stock
    • Stir Fry
    • 2 tablespoons cornflour
    • 1/2 teaspoon sugar
    • 1/4 teaspoon salt
    • 3 whole chicken breasts, skinned and cut into 2cm cubes
    • 1/4 cup (60ml) oil
    • 2-3 tablespoons minced fresh ginger
    • 1 tablespoon minced garlic
    • 1 small onion, diced
    • 2 red capsicums, cut into 2cm triangles
    • 2 carrots, sliced diagonally and thinly
    • 2 cups snow peas
    • 1 1/2 cups cashews

    Directions

    1. Sauce: Combine sauce ingredients and set aside.
    2. Stir Fry: In a bowl combine cornflour, sugar and salt. Add chicken and toss.
    3. Heat wok or frying pan to highest heat. Add oil. Heat to hot but not smoking.
    4. Add chicken, ginger, garlic and onion. Stir until chicken is opaque; about 1 minute.
    5. Add capsicum and carrots. Stir 2-3 minutes. Add peas and sauce.
    6. Cook until it comes to a boil. Add cashews and serve immediately.
