Chorizo Pasta Sauce with Linguine

    This is a very easy and tasty pasta sauce that combines Chorizo, capsicum, tomato and fresh basil that is served on linguine pasta.

    Serves: 2 

    • 1 chorizo sausage, sliced
    • good olive oil
    • 1 small onion, sliced
    • 1 teaspoon garlic, sliced
    • 1 (400g) tin diced tomatoes
    • 1 pinch salt and pepper, to taste
    • 1 fire roasted capsicum, or normal
    • 1 teaspoon sugar
    • 200g uncooked linguine, fresh if possible
    • fresh basil
    • parmesan cheese

    1. Fry chorizo in frypan on both sides then remove and place on paper towel.
    2. Add olive oil to frypan and slowly fry onion until soft then add garlic.
    3. Add tinned tomatoes, salt, pepper, capsicum and sugar. Simmer for 20 minutes or even longer will bring out the tomato flavours.
    4. Cook the pasta according to packet instructions.
    5. Add the basil at the last minute to the sauce
    6. Drain pasta and add to the frypan with sauce; combine.
    7. Serve and top with parmsean cheese.
