Lightly toast bread in toaster or oven
Scrape the fresh smoked salmon into a bowl with a fork.
Add cream cheese to bowl and mix together gently.
Peel cucumber and cut into thin, long strips.
Mash the avocado with a fork.
Spread salmon mixture on 1 piece of bread then lay the cucumber on top.
Sprinkle with salt and pepper then spread avocado over cucumber.
