Summer Salmon Sandwich

    This cool and creamy, yet crunchy sandwich is good for lunch on a hot summer day. Alternatively, cut up into bite-size squares for an entree. Serve with a slice of watermelon for an even summer-ier effect.

    Serves: 1 

    • smoked salmon
    • 100g cream cheese
    • 1/2 cucumber
    • 1/2 avocado
    • bread of your choice
    • salt and pepper, to taste

    1. Lightly toast bread in toaster or oven
    2. Scrape the fresh smoked salmon into a bowl with a fork.
    3. Add cream cheese to bowl and mix together gently.
    4. Peel cucumber and cut into thin, long strips.
    5. Mash the avocado with a fork.
    6. Spread salmon mixture on 1 piece of bread then lay the cucumber on top.
    7. Sprinkle with salt and pepper then spread avocado over cucumber.
    8. Cover with the other piece of bread.
