Easy Tofu Thai Green Curry

    A quick, easy and tasty tofu curry to tempt an appetite seeking Thai influences. Garnished with cashews and spring onions.

    Serves: 4 

    • 2 tablespoons green curry paste
    • 1 (400g) tin coconut milk
    • 1 cup (250ml) liquid chicken stock
    • 250g firm tofu, cut into bite size pieces
    • 2 teaspoons fish sauce
    • 1 teaspoon sesame oil
    • 1/2 teaspoon sugar
    • cashew nuts
    • spring onions, sliced

    1. Combine all ingredients except nuts and onions in one saucepan and bring to boil.
    2. Serve over steamed jasmine rice and garnish with cashew nuts and spring onions.
