Easy Tofu Thai Green Curry
A quick, easy and tasty tofu curry to tempt an appetite seeking Thai influences. Garnished with cashews and spring onions.

2 tablespoons green curry paste
1 (400g) tin coconut milk
1 cup (250ml) liquid chicken stock
250g firm tofu, cut into bite size pieces
2 teaspoons fish sauce
1 teaspoon sesame oil
1/2 teaspoon sugar
spring onions, sliced
- Combine all ingredients except nuts and onions in one saucepan and bring to boil.
- Serve over steamed jasmine rice and garnish with cashew nuts and spring onions.
