Banana and Coconut Bread

    A family favourite this is a regular cake in our house that is loved by the old and young, it also is great for packed lunches.

    Serves: 12 

    • 125g butter
    • 2 eggs, lightly whisked
    • 1 teaspoon vanilla essence
    • 3 ripe bananas, coarsely mashed
    • 1 cup (125g) plain flour
    • 2 teaspoons baking powder
    • 1 cup (90g) desiccated coconut

    1. Preheat oven to 180 degrees C. Grease and dust with flour a standard loaf tin.
    2. Place butter, eggs, vanilla and bananas in bowl then mix briefly to combine.
    3. Sift flour and baking powder into another bowl then add the coconut.
    4. Pour wet mixture into the dry ingredients and stir to combine; do not over mix.
    5. Pour mixture into tin and bake for 1 hour and 15 minutes or a skewer inserted into the middle comes out clean.
    6. Cool and slice. Serve with butter if desired.

    Easy to make, and nice addition with the coconut, making it different to your everyday banana bread. I will make it again.  -  06 Mar 2015
