Tender Chicken in Wine

    Something my partner and I made up last night which will definitely become a keeper! The chicken is seared then simmered in white wine and chicken stock.

    Serves: 4 

    • 30g butter
    • 1 medium onion, diced
    • 2 cloves garlic, finely diced
    • 4 chicken thighs, bone in
    • salt and pepper, to taste
    • 1 cup (250ml) white wine
    • 1 cup (250ml) chicken stock

    1. Melt butter in large baking dish on stove top and saute onion and garlic over a medium heat.
    2. Score the skin on each thigh three times with a sharp knife and season with salt and pepper on both sides.
    3. Move onion and garlic to the cooler side of the dish then turn heat up to medium high and brown the chicken on both sides.
    4. Remove chicken and add wine bringing to the boil.
    5. When wine has boiled for approximately 4 minutes add chicken stock then add chicken, skin side up and baste with the wine and stock.
    6. Place in an oven at 180 degrees C for 1 hour turning twice; make sure last turn leave skin up.
    7. Serve with rice and vegetables with sauce over the top.
