Crunchy Herb Crusted Fish

    Fish topped with a tangy crunch! The fish is covered in a unique crust made from cornflakes, basil, Parmesan, sundried tomatoes and lemon.

    Serves: 4 

    • 1 cup cornflakes
    • 1 tablespoon basil, diced
    • 2 tablespoon Parmesan cheese, grated
    • 1 tablespoon finely diced sun dried tomatoes
    • 1 lemon, zested
    • 4 fish fillets
    • olive oil

    1. Crush cornflakes by placing flakes in a plastic bag and roll over with rolling pin.
    2. Mix in basil, Parmesan cheese, sundried tomatoes and lemon zest.
    3. Place fish fillets on a baking tray and lightly spray with olive oil.
    4. Press cornflake mixture onto each fish fillet. Pile up until all of the mix is used.
    5. Spray top of cornflak coated fish with olive oil.
    6. Bake for 12 minutes or until cooked to your liking in a 180 degree C oven.
