Double Chocolate Fudge Brownies

These muffins are extremely fudgy. Serve warm or at room temperature dusted with icing sugar or cocoa. Fresh berries add a nice touch. Also can be served warm with ice cream and drizzled in warm melted chocolate.


Serves: 8 

  • 250g butter, roughly diced
  • 1 1/2 cups (300g) castor sugar
  • 1 1/4 cups (155g) plain flour
  • 1 pinch baking powder
  • 3/4 cup (90g) cocoa
  • 4 eggs
  • 1/2 teaspoon vanilla essence
  • pieces of good quality dark eating chocolate

  1. Preheat oven to 180 degrees C. Lightly grease a muffin tray.
  2. Place the butter and sugar into a microwave jug and microwave for 3 minutes on medium. Stir with spatula. (Sugar should not completely dissolve).
  3. Meanwhile, sift flour, baking powder and cocoa into a large bowl. Make a well in the centre add eggs and vanilla.
  4. Pour in the butter mixture and gently mix using a whisk until well combined. Don't over mix. The mixture is ready when it starts to come away from the sides of the bowl.
  5. Spoon mixture into muffin tray.
  6. Place a piece of broken chocolate in the centre of each muffin. Bake on centre or lower shelf of oven for 20 - 22 minutes until just firm. Allow to cool for ten minutes before removing from tray.
