Crunchy Curry Chicken

    Chicken pieces are covered in a crunchy coating made from finely chopped walnuts, curry powder and seasonings.

    Serves: 2 

    • 3/4 cup finely chopped walnuts
    • 1 1/2 teaspoons madras curry powder
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1/4 teaspoon pepper
    • 2 boneless chicken breasts
    • 1 egg, whisked

    1. Preheat oven to 180 degrees C. Line baking tray with baking paper.
    2. In a bowl add the walnuts, curry powder, onion powder, garlic and pepper; mix well.
    3. Dip chicken pieces into the whisked egg then press into the nut mixture to coat well.
    4. Place on prepared baking tray and place a piece of baking paper over the top. Place in preheated oven.
    5. Cook for 30 minutes then remove paper and turn chicken over and cook uncovered for a further 15 minutes or until cooked.
