A rich and creamy blend of sun-dried tomatoes, chilli, bacon and vegetables which all come together to create a superb tasting meal.

Serves: 6 

  • 2 cups (500ml) thickend cream
  • 1/2 cup (125ml) milk
  • 1/4 cup (60ml) sherry
  • 2 tablespoons self-raising flour
  • 50g Romano cheese, broken into small pieces
  • 70g sun-dried tomatoes, diced
  • 1kg spiral pasta
  • 500g bacon, diced
  • 100g red onion, sliced
  • 3 cloves garlic, finely diced
  • 400g red and green capsicum, diced
  • 1-2 red chillies, finely diced
  • 3 sprigs parsley, diced
  • 1 teaspoon black ground pepper
  • extra virgin olive oil
  • 1 pinch salt, to taste

  1. In a small bowl whisk milk and flour together until thoroughly mixed.
  2. Add to a large frypan the flour mixture the cream, milk, sherry, cheese, sun dried tomatoes and pepper.
  3. Leave on medium heat for about 10 minutes and stir letting it simmer just bubbling.
  4. Half fill a large saucepan with water and add a dash of salt.
  5. Once water has boiled place all pasta into saucepan and leave without lid on for 10-15 minutes to cook until al dente.
  6. Using a different frypan add bacon and some oil then keep on a medium heat, stirring thoroughly.
  7. Once cooked transfer bacon into cream sauce and mix evenly.
  8. Cook all vegetables plus garlic and chilli together in a separate small frypan.
  9. Once vegetables are cooked mix together with cream sauce also adding parsley.
  10. Place on low-medium heat for a few minutes to warm up the entire sauce evenly.
  11. Serve cream sauce on the pasta.
