Pan Fried Potato Cakes

These pan fried potato cakes are easy to make and very yummy. Great as a side dish, on sandwiches with sweet chilli sauce or even cold.


Serves: 4 

  • 4 medium potatoes
  • 1 large carrot
  • 2 medium onions
  • 2 medium eggs
  • 1 handful breadcrumbs
  • mixed herbs, optional

  1. Grate the potatoes, carrots and onions into a large mixing bowl. There is no need to peel the potatoes or carrot but you can if you like.
  2. Mix the eggs into the vegetable mixture.
  3. Throw in a handful of dried breadcrumbs and a sprinkle of mixed herbs.
  4. Mix all ingredients together well.
  5. Leave the mixture to sit for 2-5 minutes to let the juice settle.
  6. Make flat cakes with your hands from the mixture squeezing out most of the liquid.
  7. Heat a frypan with a little oil.
  8. Cook for 2 minutes on each side or until it is well browned on both sides. Serve.
