    A very yummy dairy and gluten free muffin packed with tropical fruity flavours and walnuts! Great idea for a breakfast snack on the go!

    Ingredients
    Serves: 8 

    • 1 1/2 cup soy flour
    • 2/3 cup dry powdered coconut milk
    • 2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup diced dried apricots
    • 1/4 cup shredded or desiccated coconut
    • 1/4 cup chopped walnuts
    • 2 eggs, slightly whisked
    • 1 teaspoon grated orange peel
    • 3/4 cup apple and blackcurrant juice or other juice substitute
    • 2 tablespoons honey
    • 2 tablespoons cooking oil

    1. Preheat oven to 180 degrees C.
    2. Combine soy flour, dry powdered coconut milk, baking powder and salt.
    3. Add in the apricots, shredded coconut and chopped walnuts to flour mix and fold through.
    4. In a separate bowl, combine the eggs, grated orange peel, orange juice, honey and cooking oil.
    5. Stir the egg mixture into the dry ingredients just until moistened.
    6. Grease muffin tray and fill.
    7. Bake at 180 degrees C for 30-40 minutes.
