Mini Tomato Cheese Melts

    Little cherry tomatoes covered in cheese and herbs then grilled. They make a great snack, finger food or entree.

    Serves: 20 

    • 10 cherry tomatoes, halved
    • mixed herbs
    • 3 tablespoons grated cheese

    Preparation:8min  ›  Cook:2min  ›  Ready in:10min 

    1. Line the tomatoes up on a tray with the cut side facing up.
    2. Sprinkle a little bit of cheese onto each tomato then herbs.
    3. Cook under the grill for about 2 minutes or until the cheese melts.

    I love how easy this is and how the recipe lets you add the type herbs you want as well as the type cheese. I used Italian herbs and Pepper Jack cheese. Delicious!  -  02 May 2013
