Easy Salami Garlic Bread Muffins

    These are incredibly easy and incredibly tasty garlic bread muffins that are great for party food, starters or an indulgent supper. You can replace the salami with anything, I have even tried shrimp.

    Serves: 6 

    • 4 garlic cloves
    • 1 pinch salt, to taste
    • 100g unsalted butter
    • 6 English muffins
    • 6 large round slices salami (about the same size as the muffins)
    • 80g cheddar cheese, grated
    • 80g Gruyere cheese, grated
    • 80g Mozzarella cheese, grated
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1 sprig basil leaves, diced
    • salt and pepper, to taste

    1. Crush the garlic in a pestle and mortar with a little salt to create a thick paste. Mix into the butter.
    2. Half the muffins and spread the garlic butter over each half fairly generously. Place a slice of salami on top.
    3. Mix all the cheeses with the thyme, oregano, basil, salt and pepper.
    4. Sprinkle the cheese mixture over each muffin then place in the oven at 140 degrees C for about 10-15 minutes until the cheese bubbles and browns. Serve hot.
