Mango Salsa

    Refreshing summer salsa which goes deliciously with gourmet open chicken burgers or barbecued fish.

    Serves: 4 

    • Dressing
    • 2 ripe mangoes, finely diced
    • 1 small salad onion, finely diced
    • 2 tablespoons light olive oil
    • 2 tablespoons lime juice
    • 2 tablespoons finely diced mint
    • 2 teaspoons honey
    • Salad
    • 1 mango, peeled, seeded and roughly diced
    • 1/4 cup finely diced red capsicum
    • 1 spring onion, diced
    • 2 tablespoons diced coriander
    • 1 fresh jalapeno chilli, finely diced
    • 2 tablespoons lime juice
    • 1 tablespoon lemon juice

    1. Dressing: Combine finely diced mango, onion, olive oil, lime juice, mint and honey. Cover and for best results refrigerate overnight for flavours to develop.
    2. Salad: In a medium bowl, mix mango, red capsicum, spring onion, coriander, jalapeno, lime juice and lemon juice.
    3. Cover and allow to sit at least 30 minutes before serving with dressing.
