This recipe was given to me by my Aunt Karen when I was 12 for something easy to cook. Now I've perfected it and it is what I get asked to bring to any family occasion. I hope you enjoy it!

Serves: 8 

  • 1 cup of black tea, brewed
  • 1 1/2 tablespoon mixed spice
  • 1/2 cup (125g) castor sugar
  • 2 cups (250g) self-raising flour, sifted
  • 1 cup (140g) currants
  • 1 cup (125g) walnuts, roughly chopped

Preparation:20min  ›  Cook:45min  ›  Ready in:1hour5min 

  1. Preheat to 180 degrees C. Grease a loaf tin. Make tea and leave to cool down.
  2. Mix together sugar, currants, walnuts and mixed spice. Add cooled tea and stir. Fold in self-raising flour. Put into greased loaf tin and bake for 45-50 minutes or until a skewer placed in the middle comes out clean. Serve still warm with butter.

Altered ingredient amounts. Didn't use nuts and changed mixed spice for a combination of cinnamon and nutmeg. Still awesome. - 30 Jul 2010


Amazingly easy cake to make, cant believe it tasted so good! No egg, no it stuck together I dont know! Tastes a bit like a spicy bun, everyone loved it! - 31 Jul 2009
