    This recipe was given to me by my best friend's mother. It is a lovely winter curry and very easy to make. It's not too spicy so it is suitable for children to eat.

    Ingredients
    Serves: 4 

    • 8-10 sausages
    • 4 potatoes peeled, cubed
    • 2 carrots peeled, diced
    • 2 onions peeled. diced
    • 90g butter
    • 1/2 tablespoon curry powder
    • 2 tablespoons plum jam
    • 2 chicken stock cubes
    • 1 pinch salt and pepper, to taste

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Cook sausages in a frypan then cool to one side.
    2. Cook potatoes and carrots in a saucepan; keep water.
    3. Melt butter in frypan then fry onions. Add chicken stock, curry powder, sausages and vegetables.
    4. Add 1- 2 cups of water, jam, salt and pepper.
    5. Bring to the boil then lower heat and simmer until sauce thickens. Serve with rice.
