Miss Jane's Easy Chicken Soup

    This soup is one of the most delicious chicken soup recipes I have ever tasted. Thank you Miss Jane for sharing it with us all at work.

    Serves: 4 

    • 40g butter
    • 1/4 cup (30g) plain flour
    • 3 cups (750ml) hot chicken stock
    • 1/2 cup crushed vermicelli rice noodles
    • 1 cup finely diced cooked chicken
    • 1 1/2 tablespoon lemon juice
    • 1 teaspoon dried tarragon

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Melt butter in saucepan. Cook flour and stir until bubbling.
    2. Remove from heat then gradually stir in chicken stock.
    3. Stir over heat until mixture boils and thickens.
    4. Add vermicelli, chicken, juice and tarragon.
    5. Stir until heated through.
